EL CAPRICHO
“Let our passage through the world leave a better and more friendly place than we found.”
We work with techniques that respect the harmony of our natural environment. We took up the challenge to be a winery that is friendly with the environment and to become sustainable in our way of production. We do it for our land, for us and for the generations to come.
MANUAL HARVEST
All the grapes of our wines, come 100% from our own 7 hectares vineyards, located in Villa del Carmen, Durazno.
Everything is harvested by hand. We do not use machinery to avoid bunches during the process. This way we can also pre-select the grapes in the vineyard itself. It is a more ecological, selective and efficient practice in terms of quality.
ENVIRONMENT AND NATURAL RESOURCES CONSERVATION
The water used in our vineyard comes from the rains.
Therefore, we do not use artificial irrigation. In addition, we preserve the native flora and fauna, maintaining the biodiversity of the area and providing large amounts of oxygen to the environment. To make this happen, we have planted forest and fruit trees in the area close to the vineyard.
PROTECTION OF OUR VINEYARD
Use of natural compost
We want the land where our grapes are born to be protected. That is why we use organic methods for fertilizing.
- The pruning remains are returned to the land between the rows of the vineyard as a natural fertilizer.
- We plant natural pastures, mostly oats, in between the rows and they are left to their natural process of decomposing right there to enrich the land.
- inally, we use the waste marc from the grapes. This technique serve to produce compost for the vineyards.
REDUCTION OF MACHINES IN THE VINEYARDS
We reduce the use of machinery not to compact the soil, so as we maintain a permeable soil that efficiently manages water in a natural way.
REUSE AND RECYCLING:
In our winery we use classification processes for reusing and recycling plastic waste, cardboard and wood.
ENERGY SAVING
Each sector of our warehouse is thermally insulated to keep the cold. The barrel room and the storage room for bottled wines have independent energy supplies, which allows only the necessary energy to be used, which helps reduce unnecessary consumption.
